The jebena is such a precious and highly treasured buna making pot in any habesha household around the world. Our mothers protect it and get upset at us for playing around or being careless with it. The reason for that is highly due to it being handmade and the process it takes to make the first pot of coffee. Before the first brew, our moms have to season it by boiling water and adding coffee grounds & sugar in it and letting it simmer. We use the same boiled coffee and sugar mixture to massage the body of the pot to help prevent cracks in the pot. Clay pot heat is gentle so we don’t rush the boil. It is a long process that requires patience and attention. We use low-med heat to boil. We let grounds settle before each pour for a clearer cup. Even pouring the coffee is done slowly and carefully to ensure a clear pour.
